刘思鸣 （塔里木大学生命科学学院，新疆，阿拉尔，843300） 摘要： 摘要：食品生产车间设计作为食品工厂设计的主体内容，具有非常重要的地位。新产品、
新工艺、新技术、新设备的使用和开发都离不开食品车间的设计工作。同时整个设计工作必 须符合国家标准的相关规定，方能在确保产品安全的基础上生产出色、香、味俱全的优质食 品。 核桃乳作为一种常见的植物蛋白饮料，具有营养丰富、绿色健康等特点。核桃乳的生 产工艺与豆乳类饮料工艺具有异曲同工之处， 本设计主要是在参考豆乳类饮料生产设计工艺 的基础上， 对核桃乳生产车间布置工艺和车间生产流程进行设计说明， 同时对辅助车间和部 分厂区设施进行了简要介绍。工艺流程设计主要包括原料配方的确定，生产工艺的选择；在 生产工艺的基础上进行物料和热量计算； 依据工艺选择和计算的结果， 结合实际生产经验选 择符合生产规模和工艺要求的设备； 将所选设备根据生产流程进行合理的排列布置， 完成设 备工艺流程图。车间布置设计主要内容包括：根据工艺设计内容确定车间整体构型、车间面 积；选定车间土建参数，参考土建和车间构型进行设备布置等。
